Not exactly. A spirit is an alcoholic drink that is distilled from a fermented mash of grains, fruits, or vegetables. Liqueur, on the other hand, is a spirit that has been flavoured with fruits, herbs, spices, cream, or coffee. For example: Vodka is a spirit that is made from grains such as rye or wheat. Baileys is a liqueur that is made from whiskey and cream. So they are both spirits, but vodka and Baileys are two different drinks.
No, spirits don't go off, but they do oxidize over time. The longer they're open and exposed to air, the more they'll oxidize. This will cause them to lose their flavour and aroma. So if you have a bottle of bourbon that you've been saving for a special occasion, it might not taste as good as it did when you first opened it.
There are a lot of different spirits out there, but the most common ones are: vodka, rum, gin, whiskey, tequila, brandy, cognac, bourbon.
