Sweet aromas of dried fruit and summer flowers mingle with cedar wood and tobacco on the nose, and the palate offers notes of prunes, apricots, plums, tobacco and honey, with a spicy, oaky edge.

Despite owning Sugar Cane being grown in Louisiana since the early 18th Century little if any Rum had been distilled in the state. Bayou itself only came to life in 2013 but with it came the latest technology which was used only to enhance rather than take over traditional methods.
